Pretty much every weekend, soon after I wake up, I face the good old question: “what’s for breakfast?” Whenever I feel indecisive I always opt out for smoothies. They’re quick and easy to make, and if you use the right ingredients- totally guilt-free. 

This triple berry smoothie is thick, smooth, creamy and tastes just like ice cream. I was surprised when hubby tried my smoothie and asked if I could make one for him as well. When it comes to breakfast (especially on the weekends) he’s a bacon-egg-and-cheese kind of guy, yet he couldn’t get enough of this berry goodness. I used a mix of frozen banana, blueberries, blackberries and raspberries and topped it with…more berries. Believe it or not, raspberry, technically, isn’t a “berry”, but banana is. The triple-berry factor in this smoothie is banana-blueberry-blackberry. I’m glad to know that four semesters of Biology in college didn’t go to complete waste.

After a long search, I finally found a health food store that carries goji berries. They’re a “superfruit” containing protein,Vitamins A & C, Iron, over 20 other trace minerals and have bee used in Asian herbal medicine for ages. Goji berries are great to use in your yogurts, tea, smoothies, salads, oatmeal, you name it. I used a handful as a topping and they added a nice crunch and sour-sweetness to my smoothie.

Instructions

  1. Blend all the ingredients on low speed until smooth and creamy. If you prefer a thick, ice-cream-like consistency use the exact same measurements as I did. If you'd like your smoothie to be more water-like (or be able to drink it through a straw), simply add more milk.
  2. Top off with goji berries, blackberries, raspberries and unsweetened coconut fakes
