Easy pizza for one (or two)

pizza and teaEven though I love cooking with all my heart and love being in the kitchen, I don’t always have time or energy to cook just for myself. On those days when Mark gets home late from work and I have to have dinner alone, I usually make something quick that doesn’t require much time and/or effort. For some reason cooking for two is just much more fun  and rewarding :)

One of my go-to meals on such days is home-made, dough-free, healthy pizza.

Ingredients:

1 tortilla wrap (I like to use spinach tortillas)

1 small tomato sliced thinly

1 tbs of organic marinara sauce (or organic tomato paste)

1 thick slice of fresh mozzarella, cubed

2 slices of turkey bacon (I recommend uncured & sodium nitrate free turkey bacon- I buy mine at Trader Joe’s)

1 teaspoon of grated parmesan cheese

I preheat the oven to 375F and prepare my pizza.  I spread the marinara sauce evenly and start layering all the ingredients on the tortilla using fresh mozzarella last and sprinkling the parmesan on top of everything. I place it in the oven for about 15 minutes, or until the cheese melts and the tortilla browns a little around the edges.

Some of other toppings that are like to use are spinach, olives and feta cheese, tomato and basil, ham and cheese, etc. As always, these can be be adjusted to your liking.

This pizza is very, very light and crispy and it won’t leave you feeling “stuffed” and “heavy”.
