I don’t know about you, but I love this time of year.
I love it when the trees start to blossom, sun starts to shine a little brighter and there’s this fresh, spring smell in the air. I think we all tend to get a little lazy during winter- I know I do, I just can’t stand the cold sometimes. I think that staying active is so much easier during warmer months and even though I try to keep my diet clean and healthy all year long, I always like to clean it up even more, right around this time of year. I think it’s the beautiful weather that just makes me want to drink smoothies all day and go for long runs.
Today I’m sharing a quick, healthy and absolutely delicious recipe for a green spring smoothie that is perfect to kick-start your day. It’s vibrant, full of fresh flavors, energizing and full of vitamins and nutrients. I love using spinach as a base for my green smoothies- I find it to be a little milder than other greens like kale. Pineapple adds a little sweetness and ginger adds a a nice kick to this smoothie, really taking it to the next level.
GREEN SPRING SMOOTHIE (2 servings)
2 cups fresh pineapple
2 handfuls of spinach
1/2 avocado
1 ripe banana
1 cup coconut water
2 cups of ice
1 inch piece ginger root
1 tbs flaxseed
Place all ingredients in a blender and blend on high speed until well-combined. I really love my green smoothies *cold* so I added 2 cups of ice, but if you don’t want your to be as cold, you can add 1 cup of ice and add an extra cup of coconut water.
Whether you already love green smoothies or have yet to try one- I guarantee that you will love this one!
